Three Decades of Love, Life & Happiness

I have celebrated my birthday last July 6 with a small celebration in the office and at home. I normally celebrated my birthdays with my family alone but this time I can't go for a leave since I was on leave for one week the week before my birthday week. My husband prepared a dinner for the four of us.


It was so sweet of him and he even asked the kids to prepare something for me. Which makes me extra special. A card with their hands printed. I love it! So loved it! Even my relatives back home celebrated my birthday on the same day we are celebrating mine here.

Four days after my mother arrived and she was carrying a gift my husband has bought for me. A thing I so like and want since then.


What else should I asked for? I have a very loving husband, charming & adorable kids and my supportive and wonderful mother was here with us again. It was indeed a celebration of three decades of love, life and happiness.

A Thomas Cake

It's been a while since I last update my blog. I've been busy with both family and work. I just like to share this cake I made last July 17 for my son's 4th birthday. He personally requested for a Thomas cake. After he saw his sister's cake, the Barbie doll cake I made he say to me, "mum, can you bake me a cake on my birthday?" and I replied, "yes of course, what you want for your birthday?" and he excitedly say, "Thomas, I want Thomas". And of course I'm no expert in making cakes but I have to give what my son had requested. I checked on the internet how to make a Thomas cake on fondant. Thanks to the internet, google and youtube I have learned a lot of things.

This is what I have prepared for his birthday. I made a simple Thomas fondant cake. His actual birthday in on the 18th but we decided to celebrate it on the 17th. I made a Thomas fondant cake, it's chocolate cake with butter-cream filling.


I also made chocolate cupcakes whipped with chocolate butter-cream sprinkled with candies. When my son saw the cake he was so happy and immediately says, thank you to me. I felt so happy too me.


We celebrated his birthday with Thomas-themed party. We invited our close friends in our place. Me and my mum cooked food and hubby prepared some beers. We had a whole-lot of fun especially my kids they got the chance to play with our fiend's kids. Seeing my kids enjoying their party was such a great relief. These are the things that you can give to your kids. Nothings else...happiness!

My Chocolate Crinkles

This afternoon I tried the recipe given to me by friend. I trust those recipes given to me for they used it and adjusted personally the measurements based on their preference compared to those that are on the internet.

I too adjusted the measurement of the ingredients based on my preference and the way I want it to be. Chocolate crinkles is my all time favourite since I was young. I remember buying it from my school canteen. Eating it was a heaven for me. And now I was able to bake and share it with my love ones, kids and R.

I am also sharing it to you guys, not in food form but in recipe. Enjoy and happy baking.



Chocolate Crinkles

Preparation Time: 30 minutes; staying time 3-4hours
Baking Time: 10-12 minutes

Ingredients:
6 tablespoons unsalted butter
8 ounces semisweet chocolate, chopped for easy melting
1/2 cup granulated white sugar
2 large eggs or 3 medium eggs
2 teaspoons pure vanilla extract
1 1/2 cups all-purpose flour
1/4 teaspoon salt
1/2 teaspoon baking powder

Topping:
1 cup confectionery sugar

Method:
1. Make the butter creamy using an electric mixer.
2. Add the the granulated sugar in and continue mixing for 1 minute
3. Add melted chocolate then mix again for a minute (be sure to melt the chocolate before adding to the mixture)
4. Combine the mixture with eggs and vanilla essence then continue to mix until the texture becomes soft and fluffy.
5. Followed by flour, salt, and baking powder then mix again until all the ingredients are evenly distributed.
6. Cover the mixing bowl with a plastic wrap and refrigerate for at least 3-4 hours.
7. Roll the mixture using your palms until it formed like a small ball.
8. Roll the chocolate balls over confectioner sugar until fully covered
9. Arrange on a baking tray with wax paper (each ball should be 2-3 inches apart)
10. Preheat oven to 350 degrees Fahrenheit or 170 degrees Celsius and bake the chocolate balls for 10 to 12 minutes. Do not over baked, be sure to make it fudgy.
11. Remove from the oven and put in the baking wire rack and allow to cool down.
12. Arrange in a serving plate then serve. Best served with a tea. Enjoy!
